This is an American West Coast-style ale yeast that was selected from the Siebel Institute Culture Collection for its ability to produce high quality ales. LalBrew BRY-97 is a neutral strain with a high flocculation ability that can be used to make a wide variety of American-style beers. Through expression of a beta-glucosidase enzyme, it can promote hop biotransformation and accentuate hop flavour and aroma.

Traditional ales made with this yeast include but are certainly not limited to Cream Ale, American Wheat, Scotch Ale, American Pale Ale, American Amber, American Brown, American IPA, American Stout, Russian Imperial Stout, Imperial IPA, Roggen/Rye, Old Ale and American Barleywine.

Great yeast

I’ve moved over to this yeast for my west coat IPAs and DIPAs from US-05 and have been really happy with it. I have had great attenuation, fast flocculation (clear beers!) and a deliciously clean tasting final product. Love it.

Cracking yeast

Used this for my West Coast IPA and it ripped through and created a cracking brew.

Neutral yeast. Active fermentation ~ 24 hours after pitch. completed fermentation in 3-4 days (7.5% Alc/ 40ltr batch). Fermented at 20c. Good flocculation and clear finish. Recommend for AIPA or WCIPA. Go to alternative for US-05 recipes.
