Good way to increase abv (after mashing) and helps produce a nice fluffy head to your brew without adding more barley malt flavour. I even use it in my ciders and ginger beers as I prefer a bit of foam with my bubbles and the dry wheat malt adds a clean sweeter finish. The dry wheat malt added to a whiskey wash also provides a sweeter tasting finished product with better mouthfeel and clean finish compared to only using other traditional malts and grains, resulting in superior product when wooded ( which is otherwise is only achieved by time in charred barrels.
